Author Notes:

The addition of blueberries in this frappe may seem odd but it lends a delicate fruity flavor without overpowering the main ingredients. It works well and it’s divine!


Makes: 2 1/2 cups

  • 1 cup coconut milk
  • 1/4 cup coconut rum
  • 1/2 cup blueberries
  • 1 cup coffee ice cream
  • Mint sprigs (optional)
  1. 1. Combine all ingredients in a blender. Add some ice cubes and blend until smooth.
  2. 2. Pour into glasses and garnish with mint, if desired.
