My husband loves mint and peaches, which inspired me to create this breezy cocktail. It includes Lillet, which is a light, citrusy aperitif. Perfect to enjoy on warm, lazy summer evenings! —BlueKaleRoad

Test Kitchen Notes

The citrus and bitter notes of Lillet work perfectly with the peach and mint in this refreshing summer beverage. The honey's flavor melds well with the other ingredients, and the peach bits add a fruit-salad-in-a-drink quality to it. We used about 1 cup of club soda in each cocktail, and then promptly started dreaming about drinking it on a porch swing. —The Editors

Ingredients
  • 2 very ripe peaches, peeled and diced
  • 1/2 cup fresh mint, roughly chopped plus extra to garnish
  • 2 tablespoons honey
  • 1/4 cup fresh lime juice
  • 8 ounces Lillet Blanc, chilled
  • Club soda to top off
Directions
  1. In a bowl, combine the peaches, mint and honey and muddle with the handle of a wooden spoon. Leave to macerate for 15 minutes or so.
  2. Pull out 4 pretty cocktail glasses or Mason jars. Add 1 tablespoon lime juice to each, followed by 2 ounces of Lillet each. Divide the peach mixture evenly between the glasses. Stir to mix. Add a few ice cubes to each and top off with club soda. Garnish with mint leaves. Cheers!

Yay! Congrats on the well-deserved CP. I thoroughly enjoyed my job as one of the community testers:) Here are my testing notes:


This is the kind of refreshing summer cocktail that should be enjoyed on a veranda as a hot day turns to dusk. The base of macerated peaches with honey and chopped mint is as alluring as it sounds (you’ll want a spoon to dig out every last bit from the bottom of your glass) and would lend itself to endless variations. The Lillet is a lovely and delicate companion. I added a splash more than the recipe called for, and my guests were still wishing for a little more punch, which probably says more about my guests than the recipe. It would be great with bourbon, re-dressed as a peachy mint julep. On the flip side, it’s delicious even without the alcohol, making it a wonderfully versatile recipe that’s sure to please the boozehounds and teetotalers alike.
Oh my gosh, Hannah - this is so up my alley. I'm making this as soon as I pick up a bottle of Lillet! Looks like I'm too late to test it for a community pick :-( but I'll add my comments here when I make it.
