Velvet Pancakes


Author Notes: A family favorite! These pancakes are wonderful served with wild Swedish lingonberries, such as those sold jarred by Roland.JanetFL

Serves: 4

Ingredients

  • 3 eggs, separated
  • 3 tablespoons sugar
  • 1/2 cup flour
  • 2 tablespoons cornstarch
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup plain yogurt

Directions

  1. Cream egg yolks and sugar.
  2. Sift dry ingredients and combine with creamed mixture, milk, and yogurt. Mix well. Beat the 3 egg whites until stiff and fold into mixture.
  3. Cook pancakes over medium or medium-high heat on a pre-heated griddle, making them as small or as large as you'd like.
