CRISPY (leftover) PASTA

Author Notes: "Leftovers" seems like it should be a four letter word. No one really likes it, but it doesn't have to be this way. This recipe takes leftover pasta to a whole new level; it is truly so crispy and delicious, you'll kick yourself for not making it sooner!

Serves: varies

  • leftover pasta, most any kind made with tomato sauce
  • good quality extra virgin olive oil
  1. Put a generous amount of extra virgin olive oil in a non stick pan, add the pasta, then drizzle a little more oil on top. Cook over medium high heat, not turning too frequently, allowing the pasta to become crispy, before turning each time. Pasta will become hot and crispy; cook longer for a more crispy pasta.

yum. reminds me of the crispy top layer of lasagne that I always fight over!
