Turkey Congee

Turn cold leftover turkey into a pot of delicious hot congee! —Sue Lai

What You'll Need
Ingredients
  • 1 pound Leftover turkey meat and bones
  • 4 cups Water
  • 1 cup White long-grain rice
  • 1 egg
  • 1 tablespoon chopped spring onions
  • Pinch salt and white pepper
Directions
  1. Bring water to a boil and add turkey and rice
  2. Once it is boiling, turn fire down into a simmer, stir every 10 minutes
  3. When consistency is creamy (usually after 20 mins), add salt and pepper to taste.
  4. Add egg and turn off fire after 1 min and serve with the chopped spring onions on top

I cook mine for hours in a crock pot and keep adding water. For extra flavor, I might add green onions or chives, finely chopped celery, scallops (my Chinese grandmother always used it!), sea salt, and white pepper. Occasionally, I might add finely chopped carrots (for the kids), as extra natural color. GREAT with leftover turkey!

I think you left out a few things.. Like spices and what's the green stuff?

Thanks for your comment, I made the necessary edits. I usually only use salt and pepper to taste but to each his/her own. =)
