My partner Abe makes these every Saturday morning. We otherwise don't eat potatoes so savour these. The trick is in cutting the potatoes into small cubes and waiting to add the garlic —reahpeah
Ingredients

Potatoes chopped into small cubes

2 tablespoons
Canola oil

1 teaspoon
Curry powder(we like madras)

1/2 teaspoon
Mustard seeds

1/2
Onion
-

Cloves of garlic

Salt to taste
Directions

Heat oil with curry powder and mustard seeds at medium hot heat.
Add chopped potatoes. Stir and then sort of press flat, letting them brown. Stir and repeat. Halfway through add onions. When almost done, add chopped garlic and stir. Cook until nicely brown. Add salt to taste.
