Belly Pork and Lentils

My mother made this for us 5 girls and we now ALL cook it regularly for our own families. Warming and comforting, its a tasty bowl of wonderfullness! —ruth.martin.526

  • Serves 4
Ingredients
  • 1 pound diced pork belly
  • 1 chopped onion
  • 1 tin chopped tomatoes
  • 2 bay leaves
  • 1 cup red lentils
  • 1 cup chicken stock
In This Recipe
Directions
  1. Place all the ingredients into a casserole dish,
  2. season well with salt and black pepper
  3. Bake at 300f for 1 1/2 hours, check that it is not drying out and add more stock if needed.
