Ingredients
  • Sauce
  • 1 pound tomato puree
  • 3 cups duck broth
  • 1/2 cup diced poblano
  • 1 cup diced onion
  • 4 cloves roasted garlic
  • 2 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 4 tablespoons all purpose flour
  • salt/pepper
  • Base
  • 2 pounds 85/15 ground beef
  • 1/2 pound chorizo
  • 2 tablespoons ground cumin
  • 1 cup diced green chili
  • 2 tablespoons srichacha
  • 2 tablespoons butter
Directions
  1. Combine sauce ingredients and simmer for half hour - do the same with the fortifications. Allow to cool. Apply sauce to flour tortillas and fill with the fortifications, roll, and let set. Then bake at 350 degrees for a half hour and 225 degrees for 15 minutes. Baste with clarified butter prior to turning down temp. Add cheese to top to taste. Enjoy!

Substitute for duck broth?

Pork would work; if use chicken broth perhaps with bacon (or a porcine sausage) prior - needs that ducky/porky component to come together well.
