So, I'm trying to touch some roots here and play more with Italian food.
I was looking for something a bit different but a taste people would know and remember. This would be very similar to a balsamic reduction as well. Vino Cotto meaning cooked wine. Red Wine reduced down, with mulling spices.

Ingredients
  • 6 cups Red Wine " Sweet one"
  • 1 Star aniese
  • 2 juniper berries
  • 1 Cinimon Stick
  • 1 clove
  • 10 peppercorns
  • 2 cups Granulated suger
Directions
  1. Place all in a sauce pot, the reduce till 75% you are looking of a think syrup like texture. run threw a strainer and let cool.
  2. *TIP* take a spoon of the vino cotto and a chilled plate, spread it. and see if its to your liking. hope you enjoy, and Keep Cooking! Matt

This sounds delicious, but authentic vino cotto is made purely with grape must, no other ingredients.

Make a great Butter sauce as well just warm up in a pot the mount your butter in and you'll have a Vino Cotto butter sauce
