My grandmother had a great influence on my desire to cook. Her foods were peasant fare, due to budget restrictions. Nevertheless she knew how to make everything delicious and fulfilling.

Apple pancakes were something she could whip up in minutes and if she made these for breakfast I knew she had had a decent night's sleep and was in a good mood.

So now whenever I make them it lifts my mood. They are also fabulous cold and I like to keep a stack in the fridge and snack on them during the day. —Sandra Ramacher

Ingredients
  • 4 eggs
  • 1 teaspoon honey
  • 1 tablespoon coconut milk
  • 1 teaspoon coconut oil
  • 3 tablespoons coconut flour
  • 1 teaspoon baking soda
  • 1 apple - peeled, cored and sliced thinly
Directions
  1. Whisk together the eggs, honey, coconut milk and oil until light and fluffy.
  2. Add the sieved coconut flour mixed with the baking soda and mix thoroughly.
  3. Add two tablespoons of the mixture to a lightly oiled pan heated on a low temperature and place the sliced apples on top
  4. Cook for about 6-8 minutes or until the pancake is browned. Then turn over and cook for another 5 minutes.

Awful. Maybe I did something wrong but i followed the recipe exactly. They didnt really cook on low and couldn't get them to flip and tasted like baking soda and eggs.

This was fabulous. I put all of the ingredients except the apples in a bowl and mixed away. I added some cinnamon post pour. We both loved the pancakes .

I think that this recipe is missing a few steps. It doesn't say when to put the apples in or to mix the wet and dry ingredients together.

Hi Ziggy,

The second step is to add the coconut flour mixed with the baking soda. Then once you have placed the batter into the pan you place the sliced apples evenly over the top.

Thanks sorry, I hate being that person but these look delicious and I wanted to make sure I got them right. Followed your advice and made these to snack on throughout the day and they were excellent so thanks!
