This cake is inspired by Maurice Sendak; pureed raspberries turn the batter into one of the vibrant but muted hues from his illustrations and the turbinado sugar glaze gives it a sort of whimsical sparkle.

  • For the cake
  • 8 teaspoons unsalted butter
  • 1 cup sugar
  • 2 large eggs
  • 1/2 teaspoon kosher salt
  • 1 1/4 cups all-purpose flour
  • 1/2 cup almond flour
  • 2 teaspoons baking powder
  • 6 ounces fresh raspberries, pureed
  • zest of one orange
  • For glaze
  • 3 tablespoons fresh squeezed orange juice
  • 1/4 cup turbinado sugar
