This is a quick dish to prepare. It is delicious, simple and healthy. My husband Loved it and I am sure that you will too! It is gluten and dairy free. Excellent serves with quinoa and a citrus salad. —Katherine Farrell

frozen tilapia filets rinsed

1 tablespoon
unsweetened coconut sprinkles

1 tablespoon
almond meal

olive oil spray
Directions

Preheat oven to 400. Spray a baking dish with olive oil. Put tilapia on dish. Lightly spray with olive oil. Sprinkle with Salt and pepper, coconut sprinkles, and almond meal. Lightly spray with olive oil. Bake for 6-8 minutes. Or until fish flakes easily with a fork.
