This recipe is for those days - usually at the end of the month;-) - when there is not enough money left in the pocket to buy some 'real' meat for a pot of goulash. An inexpensive piece of sausage and some potatoes create a delicious and filling meal for the whole family. Tip: make a big pot - it keeps well in the fridge and it gets better every time you heat it up. —Raudi

Ingredients

1 pound
garlic coil - cut into cubes (1/8 inch)

2 pounds
potatoes - Yukon Gold are similar - cut into cubes (1/2 inch)

1/2 pound
onions - chopped (1/2 inch cubes)

2 quarts
water

1 tablespoon
sweet parika

1 tablespoon
tomato puree - optional

4 pieces
cucumber pickles - medium size - chopped finely

salt and pepper to taste

1 tablespoon
oil or lard

1 teaspoon
crushed garlic - or more;-)

leaves of laurel
Directions

Fry onions in the oil until they start to brown.

Add the sausage, potatoes, tomato puree (if used), and paprika and fry for about two minutes.

Add the water, laurel, salt, and pepper - stir.

Bring to a boil, cover, and simmer for about 45 minutes.

Before serving add the pickled cucumbers and the garlic.

Serve with crispy white roll or baguette.

Remember: this dish gets better by the day. So make enough to keep some and re-heat it in a day or two.
