Red lentil stew/soup

This is an easy recipe. Most of the ingredients you probably have at home and you can actually add any vegetables that you like. So you won`t need to go extra shopping for this one. —Helle

Ingredients
  • 2 Medium onions
  • 2 Cloves of garlic
  • 1 piece Fresh ginger
  • 250 grams Red lentils
  • 400 milliliters Coconut milk
  • 800 grams Canned tomatoes
  • Salt and pepper
  • Some chili flakes if you like
Directions
  1. Cut the onions and garlic cloves into small dices and put it in a hot frying pan with some oil in it. Braise it lightly for a few minutes
  2. Then add chopped ginger and lentils and stir, frying it a bit on medium heat
  3. Pour in canned tomatoes and coconut milk and bring it to a boil stirring. Maybe add some water already if it`s too thick.
  4. Let it simmer for 15-20 minutes until the lentils are soft. Keep an eye on the soup and maybe add some more water in between.
  5. Meanwhile you can roast some vegetables as cauliflower cut into pieces for example. You can pretty much use any vegetable that you would like to eat with it
  6. When the lentils are cooked you can season the soup with salt and pepper end maybe some chili
  7. Serve with rice or naan or baguette, as you prefer
