Almond paste cookies with Bailey€™s©

Author Notes: I'm in love with Bailey's© so I tried adding some in a biscuit recipe MarieGlobetrotter

Makes 20-25

  • 100g almond paste
  • 50g ground almonds
  • 1/2 egg
  • 1/4 cup icing sugar
  • 1/2 cup flour
  • 1 tablespoon Bailey's ©
  • 1 egg yolk
  • 3 caster sugar
  1. Crumble the almond paste and combine with egg, ground almond, icing sugar, Bailey’s and flour to obtain a smooth dough. Kneading by hand is sometimes to best way to do this because the dough can be quite sticky sometimes.
  2. Preheat oven on 350F.
  3. Form small balls of dough and spread out on a baking tray lined with parchment paper. Lightly flatten the dough with the back of a spoon
  4. Whisk the egg yolk and brush each cookie. Sprinkle some sugar on each cookie.
  5. Bake for ca. 15 minutes
