Strawberry Vinaigrette

Author Notes: When strawberries start popping up at our local berry stand, it's always cause for celebration in our house! We tend to gobble them up quickly, but I do like to set some aside for other delicious options, such as this Strawberry Vinaigrette. Strawberries, white wine vinegar and honey get a quick whiz in the food processor and yield a bright, fruity, rosy pink dressing. I like to drizzle some over fresh mozzarella and baby spinach as a riff on caprese salad for a delightful lunch.BlueKaleRoad

Makes: 1 1/2 cups


  • 2 1/2 cups strawberries, sliced
  • 4 tablespoons white wine vinegar
  • 1 tablespoon honey
  • A pinch of kosher salt
In This Recipe


  1. Puree all the ingredients in a food processor until smooth. Store vinaigrette in a covered jar in the fridge for up to one week.
