This is a very simple raw Mexican meal using Nachos, vegan refried beans, sour cream, guacamole, and Salsa. —kirsty Hawkshaw

What You'll Need
Ingredients
  • Flaxos (Nachos)
  • 1 cup butternut squash or Courgettes
  • 1/2 cup yellow pepper
  • 2 tablespoons lime juice
  • 1 teaspoon Vitamin C Powder (to sprinkle)
  • 1 chopped and seeded hot red chilli
  • 1 pinch salt
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 1/4 cup ground flax meal
  • 1/4 cup water (or more if needed)
  • 1/2 cup almond flour (made from dehydrated almond pulp)
  • Refried Beans
  • 1 cup soaked sunflower seeds
  • 1 tablespoon cacao powder
  • 1/2 cup water
  • 1 teaspoon coriander ground
  • 1/2 teaspoon chilli powder
  • 1 soaked chipotle
  • 1 pinch salt
  • 2 tablespoons agave or honey
  • 1 tablespoon tomato powder
Directions
  1. First make the Nachos. In a vitamix blend all the wet ingredients including the Courgettes, add the tomato powder. Then add the flax meal. You can also substitute the Flax for Chia seeds (milled). On a Teflex sheet spread the mix thinly and cut into shapes as demonstrated in the class then sprinkle with a light dusting of Vitamix C powder. Dehydrate until crisp, at least 10 hours.
  2. Refried Beans Blend all the ingredients in a Vitamix until well blended.
