- 500g asparagus
- 1 large red bell pepper
- 1 teaspoon fresh lemon juice
- 1 teaspoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon crushed red pepper
- Slice peppers into 1/2 inch strips.
- Preheat oven to 400 degrees F.
- Spray cookie sheet with non stick spray.
- In a large bowl toss all ingredients and mix together.
- Arrange on a baking sheet.
- Bake until tenser, shaking pan occasionally. (15 minutes)
- Sprinkle on sea salt after placed on a serving plate. Serve.
