Roasted Asparagus and Red Peppers

Serves: 4

  • 500g asparagus
  • 1 large red bell pepper
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper
  1. Slice peppers into 1/2 inch strips.
  2. Preheat oven to 400 degrees F.
  3. Spray cookie sheet with non stick spray.
  4. In a large bowl toss all ingredients and mix together.
  5. Arrange on a baking sheet.
  6. Bake until tenser, shaking pan occasionally. (15 minutes)
  7. Sprinkle on sea salt after placed on a serving plate. Serve.
