Microwave Scalloped Potatoes

Serves: 1-2

  • 2 medium potatoes, thinly sliced
  • 3 tablespoons chopped onion
  • 1 tablespoon flour
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 3 tablespoons shredded cheddar cheese
  • 1/2 cup skim milk
  1. In a bowl mix together the flour, pepper and salt.
  2. In a microwave safe bowl, place 1/3 of potatoes and onions.
  3. Sprinkle with 1/3 of flour mixture.
  4. Repeat layers twice more.
  5. Top with cheese.
  6. Pour milk spreading it over top.
  7. Cover with plastic wrap, venting one side.
  8. Microwave on high for 4 minutes.
  9. Rotate dish, and continue microwaving potatoes on high for 2 minutes.
  10. Continue until, potatoes are tender.
  11. Cooking times may vary depending on the microwave.
