Jamocha Almond Fudge "Ice Cream"

Author Notes: This gives a classic Jamocha Almond Fudge ice-cream a healthy, dairy-free, sugar-free makeover!The Fit Foodie

Serves: 1

Ingredients

For the Ice Cream

  • 1 very ripe banana, peeled, frozen, and cut into chunks
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • 1 tablespoon almond butter
  • 1 tablespoon cocoa powder
  • 1 tablespoon brewed coffee

For the topping

  • 1 tablespoon cocoa powder
  • 2 tablespoons coconut oil
  • 1/4 teaspoon vanilla
  • chopped almonds, for garnish

Directions

For the Ice Cream

  1. Add ingredients to a food processor or blender
  2. Blend until the consistency of soft-serve ice cream, continually scraping down the sides as you do. Recipe can either be frozen for later or eaten right away.

For the topping

  1. Melt coconut oil in the microwave
  2. Combine with cocoa powder and vanilla
  3. Pour mixture and sprinkle chopped nuts onto ice cream
