Lemon Poppy Seed Biscotti

  • Makes 20
Ingredients
  • 6 tablespoons butter
  • 2/3 cup sugar
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups flour
  • 1 tablespoon poppy seeds

Directions
  1. Preheat oven to 350 degrees.
  2. Beat together butter, sugar, salt, baking powder, salt, and lemon zest until well combined.
  3. Add eggs and lemon juice and mix to combine.
  4. Mix in flour and poppy seeds.
  5. Bake for 25 minutes.
  6. Remove from oven, reduce temperature to 325 degrees, and let cool for 25 minutes.
  7. Slice log into 1/2 in pieces.
  8. Place on cookie sheet, upright, and bake for 30 minutes.
