- 1 pound red potatoes
- 1/4 cup apple cider vinegar
- 1/2 cup creme fraiche or veganaise
- 1 handful tarragon, chives, scallions, parsley, dill, thyme
- boil potatoes, whisk vinegar, creme fraiche, salt, pepper, when cool dress potatoes and fold in chopped herbs!
