Ingredients

Bell Peppers (Red or Yellow no Green)

- Mexican Style Sauce

Thin Sliced Ham

Directions

Part 1: Egg in Bell Pepper
1. Slice the bell peppers 2 - 3 inches and devein
2. Add oil to pan and heat at medium tem
3. Pan-sear bell peppers from the sides until desired toast
4. Place the bell pepper side up, and drop egg inside (w/o shell)
5. Sprinkle salt and pepper to taste
6. Let the egg cook until desired consistency

Part 2: Sauce
1. Add oil to pan and heat at medium tem
2. Slice ham as desired (preferably long strips)
3. Thinly slice jalapenos and onion / tomato in small cubes
4. Add ham to pan first and let cook for 2 - 3 minutes
5. Add jalapenos and onions to the ham / cook until semi crispy
6. Add tomatoes & add dash of salt and pepper
7. Reduce flame to ensure that the tomato loosens its juices

Part 3: Serve
1. Place two cooked eggs in bell pepper in a plate
2. Add the Mexican Sauce to the bell pepper until covered
3. Accompany with pan-seared Mexican squash and fresh avocado
