Author Notes: Adapted from the Chipits Mini chips recipe I have attempted to make it slightly healthier while still being yummy and kid approved. They are great snacks for after school and freeze very well. I hope you like them! TammieK

Makes: 48 mini muffins

  • 1 1/2 cups buttermilk
  • 1/2 cup vegetable oil
  • 1/4 cup cups apple sauce

  • 3 eggs beaten slightly
  • 2 cups all-purpose flour
  • 1 cup whole wheat cake and pastry flour
  • 1 1/2 teaspoons baking soda
