Chicken with sweet potato and red pesto

  • Serves 4
Ingredients
  • stock
  • 1 chicken carcass
  • 1 carrot, unpeeled
  • 1 onion, unpeeled
  • soup4
  • 4 sweet potatoes, peeled and diced
  • 3 tablespoons red pesto

Directions
  1. Place stock ingredients in a loarge saucepan, cover with water and simmer for approx 2 hours.
  2. Strain and keep the stock, pick any chicken pieces from the carcass, discard carrot and onion
  3. Add soup ingredients and simer until tender, Blend to suit and season to taste
