Ingredients
  • 1/2 cup unsalted butter
  • 1 1/2 cups granulated sugar
  • 1 1/4 cups unsweetened cocoa powder
  • 1 teaspoon espresso
  • 2 teaspoons vanilla extract
  • 1/4 cup greek yogurt
  • 3/4 cup confectioners surgar
Directions
  1. Melt butter in a large pan over medium heat.
  2. Add in the sugar and cocoa powder and combine. In a measuring cup, whisk together in heavy cream, yogurt, vanilla and espresso power. Slowly add to the cocoa mixture and whisk until smooth.
  3. Cook over medium heat for about 5 minutes, until the sugar has dissolved and the mixture is hot (don’t let this boil, burnt frosting= gross). Remove from heat
  4. Sift confectioners sugar to remove any lumps, and add to the frosting mixture, whisking until smooth.
  5. Cool frosting at room temperature for about 2 hours, whisking every now and then.

This was a difficult recipe. The instructions call for creme which is not listed in the ingredient list. I didn't have cream and chose to make this because I needed a recipe that didn't involve milk or cream (as I was all out). I doubled the yogurt and used about 2 T of strong instant coffee. I let the icing firm up over night and then piped it on to my cupcakes. It was delicious. I probably could have used less yogurt but I was improvising.

Terrible recipe, nothing like that picture. The cream is not listed. The yogurt curdle, you have to let it cool completely before adding it. No need for the espresso. This is a runny ganache.

Umm, I don't see the amount listed for the heavy cream ??

I used one cup. It's cooling now and seems to be in good, glossy shape. I'd say 1 1/2 cups at the most.
