Ingredients
  • 2/3 cup sugar
  • 1/2 teaspoon dried lavender
  • 1 egg
  • 2 teaspoons melted butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1/3 cup unsweetened dessicated coconut
  • 2/3 cup raw oats
Directions
  1. Preheat the oven to 350F.
  2. Grind the sugar and lavender in a prep food processor or a mortar and pestle until the lavender is finely ground throughout the sugar.
  3. In a medium mixing bowl, beat the egg. Add the lavender-sugar mixture and mix well. Stir in the remaining ingredients.
  4. Drop the dough by half-teaspoons onto a lined baking sheet (parchment is fine but I preferred the shinier bottoms that a Silpat yielded), about an inch apart.
  5. Bake for 10 minutes, until the edges are lightly golden brown. Allow to cool fully before removing from sheet.

I really wanted these to work, ever since I went to a lavender festival this past summer I often crave lavender edibles. I burned the first round as 10 minutes proved too long in my oven. The second batch cooked properly but the cookies were just sorta crystalized sugar with some lavender essence. Sadly, they mostly stuck in the teeth, not pleasant eats.

These are so pretty! I love adding lavender to baked goods and can't wait to try this. So far I've done lavender in biscotti and shortbread, but these look even better!
