Chocolate Pistacchio Cake

Ingredients
  • 3/4 cup self- raising flour
  • 3 tablespoons almond meal
  • 1 teaspoon baking powder
  • 1/2 cup sugar
  • 1 1/2 tablespoons organic honey
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 60 g unsalted butter
  • 100 g dark chocolate
  • 1/2 cup pistacchios, shelled, unsalted, toasted and coarsely chopped
  • Icing sugar
Directions
  1. In a bowl combine the self raising flour, almond meal and baking powder
  2. In a separate bowl mix the eggs and the sugar with an electric mixer until creamy and pale
  3. Add the honey and the vanilla extract and stir
  4. Melt the butter and chocolate in a baigne marie or microwave and add to the egg mixture
  5. Add the dry ingredients to the batter and fold
  6. Add the pistacchios and stir
  7. Grease and flour a round 9" inch / 23 cm baking tin and pour the batter
  8. Preheat oven to 180 ºC/ 350 ºF and bake for 30 minutes
  9. Allow to cool for 10 minutes and unmold
  10. Dust with icing sugar
