What You'll Need
Ingredients
  • 1 1/2 cups Rolled oats
  • 1/2 cup Almonds, chopped
  • 1/2 cup Desiccated coconut
  • 1-2 tablespoons Maple syrup
  • 2 1/2 tablespoons Unsweetened Apple sauce
  • 1 tablespoon Water
Directions
  1. Put oats, almonds and coconut into a food processor and grind for a minute or 2 until everything is well combined
  2. Add in the maple syrup, apple sauce and pulse for 20-30 seconds
  3. Add in the water and pulse again for a few times. By this stage you should have a dough like mixture. (see picture 3 above)
  4. Shape the dough in your hands into flat round circles, note that the mixture is rather crumbly, so you won't be able to roll the mixture into a ball.
  5. Bake on a baking tray lined with wax paper for 15-20 minutes at 150C.
  6. Let cool completely and enjoy!

I added a tsp. of pure almond extract to the recipe; and put 3 60% cocoa chocolate chips on top. I baked them without the paper on regular cookie sheets for 20 minutes, spread the melted chips like a 'frosting on the top of each one; and cooled them. They were aMAzing. Thank you So much for sharing this recipe. Kudos ~Laura
