Carmelized Onion and Goat Cheese Scrambled Eggs

Rich scrambled egg dish that will make your mouth water. Highly suggest it as a breakfast-for-dinner entree, maybe with some sweet potato fries on the side. Enjoy! —Alex

What You'll Need
Ingredients
  • 2 Eggs
  • 1/4 tablespoon Butter
  • 1/4 Diced Yellow Onion
  • 1 tablespoon Goat Cheese
  • Salt and Pepper
Directions
  1. In a bowl, whisk together eggs and sprinkle with a few pinches of salt and pepper.
  2. Add the butter and diced onion to a small nonstick frying pan and heat over medium-low heat for about 5 minutes until the onions begin to brown. Stir continuously.
  3. Once the eggs reach their ideal carmelization point, add egg mixture to the pan and stir continuously until eggs form scrambled clumps. Remove from heat just before eggs look like they are as cooked as you desire.
  4. Off the heat, stir in goat cheese and taste to adjust salt and pepper measurements.
