Diwali is just around the corner and I got my hands on this awesome recipe on Sprouted Kitchen. I modified it to make it taste Indian and it is probably one of the easiest mithais (sweets) to make. Last year I made Halwa, which is a traditional mithai with semolina flour, ghee (clarified butter), sugar and milk. I opted to make something easy, modern and relatively healthy this year. Almonds are my favorite and I call them alpha nuts because of their incredible nutritional value. Ingredients

1 cup
pitted dates
-
3/4 cup
cashews

1/2 cup
unsalted smooth almond butter

1/4 cup
almonds

1 teaspoon
cinnamon

1/8 teaspoon
nutmeg

1 pinch
ground cardamom

3/4 cup
shredded unsweetened coconut

1 tablespoon
granulated white sugar
Directions

Toss everything (except the shredded coconut and sugar) in a food processor and run it for about a minute or two. You want the mixture to be mealy rather than turning it into an almond-cashew-date butter. Taste the mixture and see if you need to add sugar. I don’t like my dessert too sweet so I didn’t need to add any extra sugar because the dates were sweet enough.

Make 1-2 inch balls.

Roll them in the coconut+sugar mixture.
