Baked Sweet Potato Polenta Fries

Ingredients
  • Fries
  • 2-3 teaspoons olive oil
  • 2.5 cups water
  • 1 teaspoon salt
  • 1 cup cornmeal
  • 1/2 cup baked, peeled, and mashed sweet potato
  • 1 tablespoon butter
  • 1/4 cup grated parmesan cheese
  • Seasoning
  • 1 teaspoon salt
  • 1 teaspoon brown sugar
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
Directions
  1. Brush a 9x13 baking dish with 1 teaspoon of olive oil and set aside
  2. In a large pot, bring water to a boil and add salt
  3. Reduce heat to low, slowly whisk in cornmeal, stirring constantly
  4. Simmer for 10-15 minutes or until thickened
  5. Remove from heat and add sweet potato mash, honey , butter and parmesan
  6. Transfer polenta to greased baking dish, spreading evenly and allow to cool completely. (You can make this the day before and cool in the refrigerator overnight.)
  7. Heat oven to 450F
  8. Unmold polenta from baking dish onto a cutting board and slice into "fries"
  9. Brush with olive oil, place on baking sheet and bake for 30 minutes, flipping half way.
  10. Sprinkle with seasoning and serve
  11. For seasoning - in a small bowl combine salt, brown sugar, black pepper, and garlic powder

Polenta listed in the directions and title but it's missing from the ingredient list so I'm not sure what kind of polenta to use nor how much. Also how thick would you suggest cutting the "fries"? Please advise, thanks!

Ah, cornmeal, salt, and water = polenta, got it!

How can I keep these from falling apart when I flip them? All of mine ripped in half when I did.

Step 5 calls for honey, but that is not in the ingredients list. How much honey?
