Author Notes: Take any size beef roast...cut slits into the meat...stuff with garlic cloves n lemon rind..drizzle meat with EVOO or any oil...bake in pre-heated oven @ 400 degrees ...until beef is seared the darkness that suits your eye..45mins -1hr....turn off oven n let the heat cool down..take out meat..let rest 30-45 mins...cut against the grain in slivers. Keeps in frig for cutting off meat 4 sandwich, stir-fry..whatever. —chi

tablespoon lemon rind
tablespoon garlic cloves
tablespoons cooking oil
- Cut slits into the meat Stuff sliced garlic n lemon rind into the slits Drizzle cooking oil/olive oil over all sides of beef Shake lemon-pepper on all sides of beef Place meat in pre-heated 400 degree oven Cook 45mins to 1 hr Turn off oven. Let meat continue to bake as oven cools Take out beef and let meat rest 30 mins Slice meat against the grain in thin slivers
