Ingredients
  • 1 Good Ripe Tomato
  • 1/4 of a Baguette
  • 1 handful Fresh Thyme
  • 2 - 4 ounces Fresh Goat Cheese
  • 1 splash Olive Oil
Directions
  1. Heat the oven to 425. Slice the baguette in half and put onto a baking sheet. Slice the tomatoes and goat cheese into slices. Lay the goat cheese on top of the baguette and top with the tomato slices. Drizzle some olive oil over the top and crumble the thyme over. If desired sprinkle with some sea salt and fresh cracked black pepper. Bake for about 10 - 15 minutes until the cheese starts to turn golden on the edges and the tomatoes are warm. Serve with a simple green salad and a nice glass of wine.
