Vegan Oat Bran Chocolate Chip Cookies

Deliciously rich vegan cookie with healthy ingredients that will satisfy every sweet tooth. —Weekly Bite

What You'll Need
Ingredients
  • 1 3/4 cups whole wheat pastry flour
  • 3/4 cup oat bran
  • 1 cup dark brown sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 3/4 cup canola oil
  • 1/3 cup orange juice
  • 1 tablespoon pure vanilla extract
Directions
  1. In a large bowl mix together the dry ingredients and set aside
  2. Combine the oil, orange juice, and vanilla
  3. then mix with the dry ingredients
  4. Roll the dough in your hands to make 1 1/2 inch balls. Place them on a large cookie sheet and flatten them to about 1/4 inch thick with your fingers or a fork
  5. Bake at 400 degrees on middle rack for about 9-12 minutes or until they are just beginning to brown. Cool on cookie racks.

Really tasty. I used 1/4 cup olive oil, regular whole wheat flour, and 1/2 cup cane sugar + 1T molasses instead of similarly listed ingredients. Delicious, and plenty sweet enough for me. Even with the reduced oil, they were (are) still tender and slightly chewy. I let the dough sit in the fridge overnight before baking. A keeper.

Just made it today and they were so good! I am not into baking choco cookies as I get turned off by the amount of butter it requires. I made a few modification though: i used just 3/4 cup of brown sugar (i think i will decrease it to 2/3 cup next time, just a bit sweet for my taste), and used bittersweet chocolate. (Will probably make half choco chips and half walnut next time). Other than that, a keeper! Thanks!
