Swedish Christmas Porridge

I'm a sucker for old cookbooks. Found this lovely little one, Swedish Food, at the Pound Ridge Elementary School Pancake Breakfast Book Sale (now that's a mouthful.) Printed in 1960, it's the 12th edition. I've transcribed the recipe for Swedish Christmas Porridge below. —mrslarkin

Ingredients
  • 1 cup rice
  • 1 tablespoon butter
  • 1 cup water
  • 5 cups milk
  • 1 teaspoon salt
  • 1 tablespoon sugar
Directions
  1. Scald rice with boiling water.
  2. Melt half of butter, add rice and water and boil 10-15 min. or until water disappears.
  3. Add milk and cook slowly 45 min. or until rice is tender. Season and add remainder of butter.
  4. Pour into deep dish and serve with cold milk, cinnamon and sugar.
