Author Notes: Would you believe it- these omelets are not fried, they're baked! These can be made within 15 minutes. Save these for the days you oversleep, or for those lazy weekends. Or just have them anytime you want because they're so quick! —Lok Yi
Makes 12 mini omelets
- 12 large eggs
- As many toppings/spices as you want
- Prepare by lining your muffin/cupcake tin with foil. A preferable size would be medium/large sized tins. If your tins are really large, you might be able to fit 2 eggs in one. You can just grease the tins if you want.
- Crack your eggs into the tins and beat lightly. Add in your toppings and beat if wanted, or just sprinkle on top.
- Bake in a preheated oven at 180C for 10-20 mins, depending on how creamy you want your omelets.
