Shortcut Cheesecake

Author Notes: This is exactly it. A shortcut to delicious cheesecake. So fulfilling and decadent. My family raved about this (especially the crust). Best part? Sugar free! Lok Yi

Serves: 8

  • 2 cups crushed biscuits (I suggest digestives)
  • 1/2 cup melted butter

  • 8 1/2 ounces cream cheese
  • 2 cups heavy cream
  • 1 cup fruit (optional)
  1. Mix the biscuits and butter together until a sandy mixture. Press it into your pie tin, and make sure it's pressed down well. Bake in a preheated oven at 180C for 15-20 minutes or until browned a little. Leave to cool before proceeding.
  2. Whip the cream cheese and cream until a smooth mixture. Spread the mixture into the tin with care. You don't want to damage the crust! Refrigerate for at least 2 hours before serving.
