French Toast Style Scrambled Eggs

This simple dish is inspired by French Toast, and is a favourite of my son. I always make it for him when he is under the weather and it always makes him smile. This dish is also a lovely option when serving a gluten-free lunch. —BC Mama

Ingredients
  • 2 Eggs
  • 1/4 teaspoon Vanilla Extract
  • 1/2 teaspoon Sugar
  • 1/4 tablespoon Butter
  • Sprinkle of Cinnamon
  • optional handfuls Fresh Blueberries
Directions
  1. In a small mixing bowl, beat your eggs, vanilla and sugar.
  2. Heat butter in a small skillet, until melted.
  3. Add your eggs to the skillet and cook on a low heat. Make sure you stir frequently, and while stirring, sprinkle in the cinnamon.
  4. Once cooked to your desired consistency, serve! They are lovely on their own, but taste great with some blueberries sprinkled on top.

I just googled "french toast eggs" and found this. I used to make them all the time when husband and I first got married. I'd just scramble the egg mixture left over when making french toast. Recently I made it for my kids for the first time I guess, and they thought it was so bizarre. I starting thinking that I'd never seen a recipe for it so maybe I actually invented a dish. I guess not. But I can vouch for the idea - it's delicious. I need to start making this on a regular basis.
