I could eat eggs at every meal, but sometimes you want something to jazz them up. Sardines, garlic, and dill turn fried eggs into an event in the easiest way possible. This is easy enough for a weekday breakfast, but delicious enough for a weekend brunch. —Ty Ryavec

Ingredients
  • 3 cloves garlic, minced
  • 1 can sardines, rough chopped
  • 3 tablespoons dill, rough chopped
  • olive oil, for cooking
  • 4 eggs
Directions
  1. In a small saute pan, sweat garlic in olive oil over medium heat. Once translucent, add sardines and lightly saute. Remove from heat and fold in the dill, reserving a few sprigs for garnish. Set aside.
  2. Serve with fried eggs, your favorite toast, and a great cup of coffee or your favorite brunch cocktail.

I had a can of sardines in the pantry that I was saving for something quick and delicious and this was it! I added some red pepper flakes and lemon to the sardines and it was lovely with a runny egg. I'll be eating the leftover sardines on crackers later today!
