Author Notes: This is a light but wholesome dairy free, spelt pancakes recipe with a poppy seed crunchstella Pereira

Makes: 20 mini pancakes

  • 3/4 cup Spelt flour
  • 1/4 cup cocoa powder
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 2 Eggs (separated)
  • 1/2 cup Hot Water
  • 1 tablespoon poppy seeds
  1. Place a Skillet on gentle heat. Do not over heat!
  2. In a large bowl, whisk egg yolks and sugar. Slowly add boiling water until well blended. Sieve flour and cocoa into the bowl and gently incorporate. Add poppy seeds.
  3. Add baking powder to egg whites and whisk until stiff. Gently fold into pancake batter,
  4. Serve with chocolate sauce if you've been good lately!!
