How do you shave beef? What cut do you use?

I don't shave the beef myself. I purchase shaved beef, like the one they use to make cheese steak. But, if you don't have such an opportunity, you could place steak (like strip loin) in freezer for nearly 1 hour (this makes it easier to slice it). Then you can slice very thinly.
