- 2 Medium boiled eggs, peeled and diced
- handfuls Cherry tomatoes, halved
- 1 Hass avocado, cubed
- 1 tablespoon Olive oil
- pinches Sea Salt (Maldons)
- pinches Black Pepper
- Combine all ingredients in a bowl, tossing gently
- Serve in warm tortilla or with lightly toasted bread
