Fresh, delicious and packed with protein, vitamin C and good fats, this breakfast requires minimal effort to satisfy your taste buds and appetite all morning long

  • 2 Medium boiled eggs, peeled and diced
  • handfuls Cherry tomatoes, halved
  • 1 Hass avocado, cubed
  • 1 tablespoon Olive oil
  • pinches Sea Salt (Maldons)
  • pinches Black Pepper

  1. Combine all ingredients in a bowl, tossing gently
  2. Serve in warm tortilla or with lightly toasted bread
