Makes 6 patties

  • 3 cups HOME COOKED AND MASHED PINTOS BEANS
  • 1 LARGE EGG BEATEN
  • 1 teaspoon BLACK PEPPER
  • 1 teaspoon SEA SALT
  • 1/2 MED. CHOPPED ONION
  • 1 cup YELLOW CORN MEAL
  • 1/3 cup COOKING OIL
  1. COOK BEANS UNTIL SOFT,REMOVE FROM HEAT LET COOL SLIGHTLY, THEN MASH THEM TOO A PULP, I USE A SLOTTED POTATO MASHER..
  2. TO THE BEANS ADD THE EGG
  3. THEN ADD THE PEPPER, SALT AND ONION
  4. THOUROUGHLY MIX ALL THE ABOVE INGREDIENTS TOGETHER,, I LIKE USING MY HANDS FOR A GOOD MIXTURE...
  5. TAKE OUT APPROX I/2 CUP OF BEAN MIXTURE AND FORM INTO A PATTIE ABOUT 1/2 THICK...DO THIS WITH THE REMAINING BEANS..
  6. ROLL PATTIES IN CORNMEAL COATING WELL BOTH SIDES
  7. PLACE PATTIES IN HOT BUT NOT SMOKING OIL AND FRY UNTIL BROWN ON BOTH SIDES,,, REMOVE FROM OIL AND PLACE ON PAPER TOWELS..
