Matzo Brei with Bacon and Maple Syrup

This recipe was sent to me by food52'er linzeralla. I adapted it very slightly. Sure, it's not Kosher, but it's really good! —fiveandspice

Ingredients
  • 1 piece of thick-cut bacon, cut into small pieces
  • 1 sheet of matzo
  • 1 large egg, lightly beaten
  • 1 tablespoon heavy cream
  • Salt and pepper
  • Maple syrup
Directions
  1. In a small-medium frying pan, cook the bacon pieces over medium heat until they’re starting to get crispy and their fat has rendered out.
  2. In the meantime, break the matzo into bite-sized hunks and put it in a bowl. Cover the matzo with warm water and let it soak for 30 seconds, until just slightly softened, then drain well. Whisk the egg with the cream and generous pinches of salt and freshly ground black pepper. Stir it into the matzo, then add the mixture to the pan with the cooking bacon.
  3. Cook, stirring and flipping occasionally until some portions are browned and crispy around the edges. Serve topped with a drizzle of maple syrup, if desired.

I used turkey bacon, does that make it any more Kosher?

I grew up eating matzoh brei with maple syrup. My dad went to the U of Wisconsin in the 1940's and it was his homage to the sugar of the north. I've always served it as well and wouldn't serve it any other way. Deeeelish!

Hi..and just for those of us who are Kosher..there is Beef fry! You can always make this up ahead of time or fry it half way through and then toss it into the mix at the beginning of the egg mixture an enjoy it the same. Now of course you'd be fleishig, but once in a while, a meat breakfast can't hurt.

Did you know Streits is the only producer of matzo in the USA. I have a box of Holyland matzo that I bought at Trader Joes. Country of origin = Israel.

Definitely not Kosher but a nice variation for sweet & porky.
