I used the peels from about 15 clementines, which you can probably use less, and simmered that in 1 quart of water, and then added 1/2 pound granulated sugar. Simmer for about 20 mins, and taste as you go! you can stop cooking when you think the flavor is concentrated enough. Let this mixture cool, strain out the peels, leaving you with the delicious simple syrup! Then just pour the liquid into whatever fun containers you like and keep in the fridge.
