Peanut Butter Cookies (Vegan)

These healthy peanut butter cookies are soft, chewy, and packed with peanut butter flavor

Ingredients
  • 2 cups whole wheat pastry flour
  • 1 cup natural peanut butter (I used chunky)
  • 1 cup maple syrup
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon baking soda
  • 3/4 teaspoon fine grain sea salt
  • 1 1/2 teaspoons vanilla paste (or vanilla extract)
Directions
  1. Preheat oven to 350F degrees.
  2. In a medium mixing bowl combine the flour, baking soda, and salt.
  3. In a separate larger bowl combine the peanut butter, maple syrup, olive oil, and vanilla.
  4. Pour the flour mixture over the peanut butter mixture and stir until barely combined (still a bit dusty looking)
  5. Let sit for five minutes, give one more quick stir (just a stroke or two)
  6. Drop by heaping tablespoonfuls onto parchment-lined baking sheets. Press down on each one gently with the back of a fork.
  7. (** Note: This is a loose batter, so if you’re set on doing criss-crosses, go ahead and chill the batter for an hour or so before this step)
  8. Bake for 10-11 minutes ... keeping an eye on them so they don’t over bake .. or they'll be dry.
  9. Let cool five minutes and transfer to a cooling rack.

Yum! Had these at a potluck and had to have the recipe! Making them now and ate a lot of the dough lol!!!!

I made these and added a 1/2 cup extra Flour,used vegan sugar, vegan brown sugar probably a 1/2 cup each and only maybe 1/8 cup syrup only cause it wasn't moist enough to quite form the cookies. And when that didn't work cause I did get a little flour happy.... I added 1/2 cup unsweetened applesauce. With your recipe and my additions it made a total of 64 3inch cookies that we're a hit here at home. They were soft like the store bought soft batch cookies only with any egg. Thank you for this recipe. It turned out amazing. My little secret that my kids don't know...a scoop of protien pea powder, chia seeds and flax seed went into these cookies also. They seem pretty healthy to me.

Oh my goodness .. homemade walnut butter (!?) I bet they were incredible :)

They were awesome...I had just gone to Costco and had a huge bag of walnuts, and then I decided to play with my food. I toasted up about 3 cups of walnuts and threw them in my food processor for a few minutes. Flavored it with a pinch of salt and a couple teaspoons of maple syrup. I only with that it made a bit more than it did; I had just enough for the cookies and one walnut butter sandwich.

I made these with homemade walnut butter...delicious! and an egg-free cookie, yay!
