This recipe was a new twist on a regular candy plate favorite that I've made for years called tortoises, originally made with peanut butter and almonds. For this one, I incorportated crisp apple chips and a home-made walnut butter by gluten-free girl's recipe found here: http://glutenfreegirl.com... made with a few tweaks. Aside from the time involved in making the walnut butter, these are easy to whip up and go far. —SugarnStuff

Ingredients
- Walnut Butter

2 cups
toasted walnuts

1/4 teaspoon
salt

1 teaspoon
honey

2 teaspoons
cinnamon

1 teaspoon
walnut or hazelnut oil.
- Apple Raisin Slowpokes
-
1 cup
semi-sweet chocolate chips

1 cup
butterscotch chips

1
recipe walnut butter
-
1/2 cup
raisins
-
2 cups
crispy rice cereal

2.5 ounces
bag apple cinnamon chips (I used Seneca), crunched into smaller peices
Directions
- Walnut Butter

Place warm walnuts in food processor and mix until pureed. Add salt, honey, cinnamon and oil and puree some more. This yields slightly under one cup of nut butter. Set aside.
- Apple Raisin Slowpokes

Place a saucepan over medium heat and add both chocolate and butterscotch chips, along with walnut butter. Stir until melted and combined. Reduce heat.

Stir in raisins, rice cereal and apple chip peices.

After everything’s mixed in, drop the mixture by tablespoonfuls onto a sheet of parchment paper and leave them to set up (if you want to speed the process up, you can always stick them in the fridge or freezer even).

Keep in refridgerator as these tend to soften at warmer temps.
