This recipe was inspired by an article Michelle Obama wrote for Better Homes & Gardens. The original recipe was for fish tacos and melon salsa which you serve with feta. We thought, like with everything Mrs. Obama does, that looks amazing... and it was! But the real star was the combo of the salsa with the feta. So we got rid of the fish and the tacos, added some more summer veg (basically whatever is in the CSA), and before we knew it we were sitting clutching spoons wondering how often it was acceptable to eat only salsa for dinner... —Fancy and Casual

Cantaloupe

Ears of Corn

Red Bell Pepper

Cucumber

Red Onion

Jalapeno

1/2 cup
Feta (crumbled)

1 handful
Cilantro

Lime
-
1 dash
Olive Oil
Directions

Chop the melon into cubes, shuck the corn and cut the kernels from the cob, chop the pepper and cucumber into small chunks, dice the red onion and jalapeno. Throw everything together in a big bowl.

Roughly chop the cilantro and cut the lime in half. Squeeze the lime juice into the bowl, add a dash of olive oil, crumbled feta, and cilantro. Gently toss everything together and season with salt and pepper to taste.
