Banana bread has always been one of my favourite comfort foods, my grandmother used to bake it in huge batches in the spring and freeze it for special occasions throughout the year.
Taking her recipe and making a few adjustments by using sour cream and first caramelizing the bananas yields a flavourful and fluffy banana bread. —GuysEnPlace

Ingredients
- For the Caramelized Bananas

1 cup
Sliced Bananas (About 3 Bananas)

2 tablespoons
Butter or Margarine

2 teaspoons
Brown Sugar
- For the Bread

1/2 cup
Butter or Margarine

Eggs

1 teaspoon
Vanilla

1/2 cup
Sour Cream

1 cup
Sugar

1 1/2 cups
Flour

1 teaspoon
Baking Soda

1/2 teaspoon
Salt

1/2 teaspoon
Cinnamon
Directions
- For the Caramelized Bananas

Peel and slice the bananas into medallions about 1/2 an inch thick, or as desired, and set aside.

In a pan over medium heat melt the butter. Once the butter has melted add the brown sugar and stir constantly until the sugar has melted and combined with the butter.

Add the bananas to the pan and stir to coat. Continue cooking until the bananas have softened and browned, about 5 minutes.

Remove the bananas from heat, remove them from the pan to cool and set aside.
Reserve the remaining sauce from the pan separately.
- For the Bread

Preheat oven to 350 F and grease a large loaf pan.

Begin by creaming together eggs, butter, sugar and vanilla.

In a separate bowl, combine and whisk together the flour, salt, baking soda and cinnamon. Once combined, add the dry ingredients to the eggs, butter, sugar and vanilla mixture.

Mash the caramelized bananas and add them with the sour cream to the batter and mix well.

Add the batter to the loaf pan and drizzle the reserved caramel over the top.

Bake for 1 hour.
